Carrot Cake Overnight Oats - Tims Dairy

Makes approx 2 servings

What you’ll need:

2 rounded tbsp rolled oats

1 tbsp mixed seeds (we used sunflower and pumpkin seeds)

200g Tims Dairy Natural Greek style yogurt

150g Tims Dairy Vanilla Greek style yogurt

1 small apple, grated

1 medium carrot, grated

1 tbsp sultanas

1/2 tsp mixed spice

How to do it:

Place all the ingredients (except half of the vanilla yogurt which is needed as the topping) into a medium sized bowl and mix well until everything is combined

Empty into a serving dish (or divide between two ramekins), level off the surface with the back of a spoon then cover and refrigerate overnight

In the morning, spread the remaining vanilla yogurt over the top and serve – there’s enough for two servings but it keeps well, just cover and put it back in the fridge for the next day

Recipe Tip:

For a change, replace the apple with grated pear, the mixed spice for ground ginger and swap in honey yogurt instead of vanilla – delicious!
