Lauren Currie's Flatbreads with Fruit and Yogurt

Try this simple and ingenious recipe idea for flatbreads from @currieoncooking for a delicious, light and moreish snack.
Makes 5 or 6
- 250g SR flour
- 1 teaspoon baking powder
- 150g Greek style honey or Greek style vanilla yogurt
- Coconut oil
- Splash or two of water (only if needed)
- Fresh selection of mixed berries (eg raspberries, blueberries)
- Some more of your favourite yogurt
- Runny honey (optional)
Mix all the ingredients together well until fully binded and knead for a minute or so to form a smooth ball. Separate into 5 or 6 evenly sized balls and roll out thinly on a floured surface. Gently heat some coconut oil in a frying pan then fry until golden brwn. Turn over to fry the other side then serve straight away sprinkled with fresh berries, another dollop of yogurt and drizzle with runny honey.

*We also found that you can use these flatbreads as a great accompaniment to savoury dishes too - perfect to dip into curries and soak up Greek mezze dips.
